Loaded Broccoli Chicken Soup
Ingredients
- 4 c broccoli florets
- 1 onion, chopped
- 3-4 stalks celery, chopped
- 4 Tbsp butter, 2 Tbsp EVOO
- 1/4 c flour
- 2 c water or chicken broth
- chicken bouillon (optional)
- 2 c milk
- 2 c chopped rotisserie chicken
- Toppings:
- shredded cheddar cheese
- cooked bacon, crumbled
- freshly ground pepper
Instructions
Cut broccoli florets into bite sized pieces. Steam till soft, but not mushy or falling apart. Take out the broccoli and let it cool on a plate. Saute onion and celery in butter and olive oil till soft and translucent. Add in flour, and stir till well combined and bubbling. Add water and bouillon, and bring to a boil. Cook for 1 min, or till thickened. Turn heat to low. Add milk and chicken, and heat till hot, but not boiling. Top with bacon crumbles, shredded cheddar cheese, and fresh pepper.
Servings: Makes enough for 2 meals for 4.
