Asparagus Puff Sandwiches

Ingredients

  • 3/4 c. swiss cheese, shredded
  • 2 Tblsp. stone ground mustard
  • 5 Tblsp. mayo
  • 1 tsp. horseradish
  • Multigrain bread
  • Ham slices
  • 1 bunch asparagus

Instructions

Rinse asparagus (warm water and then cold water) and trim to fit on slice of bread. Steam for a short time - just long enough to make tender (be careful to avoid overcooking!) Toast bread and butter and top with ham slice and steamed asparagus spears. Mix cheese, mustard, mayo, and horseradish together in bowl, and spread over sandwich. Broil in oven until cheese sauce turns slightly brown and bubbly.
