Fluffy GF Pancakes
Ingredients
- 5 eggs
- 1 tsp baking soda
- 1/2 tsp baking pwd
- 1/2 tsp salt
- 2 Tbsp sugar, or sugar substitute
- 1/2 c oil (I used melted coconut oil)
- 1/4 c butter (melted)
- 1/2 c water (possibly more)
- 1 1/2 c almond flour
- 1/2 c coconut flour
Instructions
Combine liquids together in blender, and then add flour while blender is running. Allow mixture to set for 15-20 minutes to allow baking soda and pwd to work. Spoon onto hot (325 degrees-350) griddle and spread out a bit. Flip when edges start to dry. (You'll probably see a few bubbles, but not nearly as many as with regular pancake mix.)
Notes: This was an experiment combining two different recipes. The original recipe called for only almond flour. I wanted to add more fiber to the recipe, but with the coconut flour, also had to add more oils. If this recipe was made with only almond flour, you could significantly decrease the amount of oils.
