White Chicken Chili

Ingredients

  • 1 4.5oz can chopped green chiles
  • 3-5 diced jalapeños
  • 1 diced onion
  • 4 tbsp butter
  • 2 garlic cloves, finely minced
  • 2 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp cayenne (optional)
  • 4-8 oz cream cheese (optional)
  • 1 lb chicken, cooked and diced
  • 1.5-3 cups chicken broth
  • 2 cans white beans
  • 1/4 cup heavy whipping cream or milk (optional)
  • Spinach, chopped (about half a bag)
  • Salt and Pepper to taste

Instructions

Add green chilis, jalapeños, onion, and butter to cooking and saute or steam till soft. Add minced garlic, cumin, oregano, and optional cayenne, and saute an additional 30 seconds, or till fragrant. Take off of heat, and add cream cheese, stirring till it is incorporated and no clumps remain. Then add chicken, broth, and beans. Bring to a simmer, stirring frequently. Just before serving, add spinach, and cream or milk if desired.

Can serve with favorite toppings such as: pepper jack cheese, avocado slices, cilantro, sour cream
