Loaded Potato Soup

Ingredients

  • 6 c. quartered baby red potatoes
  • 4 slices bacon, diced
  • 2 onions, finely chopped
  • 1-2 c celery, finely chopped
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 2 1/4 c milk
  • 1/4 c shredded cheddar cheese, plus more for serving
  • 1/4 c shredded swish cheese
  • 1/4 c chicken broth, milk, or water
  • salt and pepper to taste
  • Can serve with parsley, sour cream, and sliced green onions

Instructions

Chop veggies and cook in crockpot with 2c water till soft (several hours on high, or overnight on low).

Melt butter in large pot and add flour. Slowly add milk (can use veggie water + pwd milk for increased taste), and stir constantly to make rue. Boil, while stirring, till thickened. Add veggies and cheese, and stir to combine. Serve with sour cream, additional cheese, sliced green onions, and cooked bacon on top.
