Jerk Shrimp with Mango Salsa

Ingredients

  • ¾ lb peeled and deveined, large shrimp
  • ½ Tbsp Caribbean Jerk seasoning
  • ¼ tsp salt, divided
  • 2 tsp olive oil
  • 1 (6-oz) pkg diced mango (or use 1 mango)
  • ½ red bell pepper, diced
  • ½ jalapeño pepper, seeded and minced
  • 1 Tbsp chopped fresh cilantro
  • ½ Tbsp fresh lime juice
  • ⅛ tsp pepper

Instructions

Instructions Toss shrimp with Jerk seasoning and ⅛ tsp salt. Cook in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes or until shrimp turn pink. Toss together mango, bell pepper, jalapeño, cilantro, lime juice, and ⅛ tsp each salt and pepper. Serve shrimp with salsa.

Serve over: Cauli-Rice with Pepitas Serves 2 Ingredients 1 (16-oz) pkg frozen riced cauliflower ¼ cup raw pepitas (pumpkin seeds) ¼ tsp salt ¼ tsp pepper 1 Tbsp olive oil 2 green onions, chopped Instructions Cook cauliflower, pepitas, salt, and pepper in hot oil in a large skillet over medium-high heat 10 to 15 minutes or until browned, stirring occasionally. Stir in green onions.
