Crispy Baked Honey Mustard Pork
Ingredients
- 6 large pork chops
- 2 large eggs
- 3 Tbsp butter
- 3 c breadcrumbs
- 1/4 c olive oil
- 1 tsp onion pwd
- 1 tsp garlic pwd
- 2 tsp smoked paprika
- 2 Tbsp mixed dried herbs
- salt / pepper to taste
- 1/4 c clear honey
- 2 Tbsp dijon or wholegrain mustard
- 2 Tbsp red wine vinegar or lemon juice
Instructions
Take the pork chops out of the fridge about 30 min before you are ready to start. Pat them dry with paper towels. In a wide, shallow bowl, combine the ingredients for the breading mixture, mix well and set aside. In another wide shallow bowl lightly whisk the eggs. Coat each pork chop in the egg mixture, and then coat with breading mixture, being sure to coat all sides. Place the chops on baking tray lined with foil and lightly sprayed with non-stick spray. Sprinkle some of the remaining breading mixture on each pork chop and top with 1/2 Tbsp of butter on each. Bake in the oven for 30-40 min depending on the thickness of your cops. Meanwhile, combine all the ingredients for your honey mustard sauce and whisk to combine. 5 min before your chops are ready, pour 2/3 the sauce over the chops and put back in the oven to finish cooking. Save the rest of the sauce for dipping.
