Golden Harvest Soup

- 2 Tbsp butter
- 5 c squash, peeled and cubed
- 2 potatoes, peeled and cubed
- 1/2 tsp pepper
- 1 tsp salt
- 2 c leeks, peeled and cubed
- 4 c chicken broth
- 2 slices thick smoked bacon, cooked till crispy, and crumbled or diced ham
- 1 c half and half
Instructions
Melt butter in pot. Add potatoes and squash, salt, and pepper. Saute for 5 minutes. Add leeks - saute for 3-5 more minutes.
Add chicken broth, bring to a boil, and simmer until potatoes are soft. Put crumbled bacon in the bottom of a blender, add soup on top (leaving off part of the lid to vent steam), and puree until smooth. When all is blended, add half and half. Serve warm.
