Italian Sausages with Peppers and Onions

- 2 large green peppers
- 1 medium onion
- 1 clove garlic, minced
- 1 1/2 Tbsp. oil (cooking or EVOO)
- 1/2 tsp salt
- 1 tsp sugar
- 1/4 tsp pepper
- 1/4 tsp dried basil
- 1 can (14 oz) tomatoes (I use diced or crushed)
Instructions
Cut peppers and onions into thin slices and saute or steam with garlic and oil in sauce pan. After the peppers and onions have softened, add spices and tomatoes, and simmer 15-25 min, or till thickened. Serve over Italian sausages in a bun.
Note: This recipe can be easily modified to make an excellent pasta dish as well. I usually add 1 additional can of tomatoes and a bit more basil. Rather than grilling the sausages, I slice and saute them on the stove till they are crispy. Serve with pasta (rotini is our favorite), peppers and onions, and the sausage rounds on top.
