Carolina Bourbon Barbecue Sauce

Ingredients

  • 1 Tblsp olive oil
  • 2 garlic cloves, minced
  • 1/4 c finely chopped onion
  • 2 Tblsp finely chopped celery
  • 2 Tblsp finely chopped red bell pepper
  • 1/2 c firmly packed dark brown sugar
  • 2 Tblsp yellow mustard
  • 1 1/2 tsp chili pwd
  • 1 1/4 c ketchup
  • 1 Tblsp Worcestershire sauce
  • 1 Tblsp Tabasco sauce
  • 1/2 tsp cayenne pepper
  • 1 Tblsp red wine vinegar
  • salt and pepper
  • 2 Tblsp bourbon

Instructions

In a large saucepan, heat the oil over medium heat. Add the garlic, onion, celery, and bell pepper and cook, stirring occasionally, until the onion is translucent, about 3 minutes. Add the brown sugar, mustard, chili pwd, ketchup, Worcestershire, Tabasco, cayenne, and vinegar. Season with salt and pepper. Stir well, bring to a simmer, and reduce the heat to low. Simmer, stirring occasionally, until very thick, about 1 hr. Remove from the heat and stir in the bourbon. Use immediately or store in sealed containers in the refrigerator for up to 6 months.
