Carolina Bourbon BBQ Shrimp and Okra Skewers
Ingredients
- 12 medium okra, halved lengthwise
- 20 extra shrimp, peeled and deveined, with tails intact
- vegetable oil for brushing or spraying
- salt and pepper
- 2 c Carolina Bourbon BBQ Sauce https://lailrecipes.herokuapp.com/recipes/432
- skewers - wood or metal. If using wood, don't forget to soak for 30 minutes prior to use.
Instructions
Heat a gas or charcoal grill to high. Thread skewers alternately with okra and shrimp. Brush the grill rack with oil. Brush the skewers with oil and season with salt and pepper. Grill the skewers, turning once, until the shrimp are cooked through, about 3 minutes per side. Remove the skewers from the grill and brush both sides with a generous amount of bbq sauce. Return the skewers to the grill and cook for 30 seconds on each side. Serve hot, with additional bbq sauce on the side.
