Grilled Cheddar, Brie and Apple Sandwiches

- 4 slices of sourdough or hearty whole grain bread - thicker slices taste best
- about 1 tablespoon olive oil (or olive oil spray)
- 1 ounce of brie (softened at room temperature)
- 3 ounces of sharp cheddar (grated, at room temperature)
- 1/2 sweet apple (I use Gala, sliced into 1/4-inch thick slices)
Instructions
Heat a nonstick frying pan to medium high heat. Lightly brush the olive or spray each side of each slice of bread. Toast one side of each slice of bread lightly in the frying pan. Remove the bread, and spread the brie on the toasted sides of 2 pieces of bread. Top with the cheddar and 2-3 slices of apple. Top each with the second slice of bread - toasted side down. Return the sandwiches to the pan, and lightly toast on each side. Slice each sandwich in half and serve immediately.
