Leftover Turkey Grilled Cheese

- 4 ounces spinach
- 1/2 teaspoon olive oil
- 6 slices good quality bread
- 8 ounces gruyere cheese (shredded)
- 1 cup leftover turkey (cooked, and torn into large pieces)
- 1/2 cup apple butter
- 3 Tablespoons mayonnaise
Instructions
Set a skillet over medium heat. Wilt the spinach in 1/2 teaspoon olive oil and then set aside. Spread 1/2 Tablespoon mayonnaise on one side of each piece of bread. Place three pieces of bread, mayo side down, into the hot skillet. Top each piece with 1/6 of the gruyere, 1/3 of the turkey, 1/3 of the spinach, and roughly 2 Tablespoons of apple butter. Cook until the edges of the bread are crispy and the cheese starts to melt ( about 3 minutes). Top each piece with the remaining cheese, and another piece of bread, mayo side up. Carefully flip each sandwich so the untoasted mayo side is now down. Cook for another 3 - 4 minutes, or until the rest of the cheese melts. Serve with more apple butter for dipping!
