Golden Corn Bread Muffins
Ingredients
- 2 eggs
- 3/4 c buttermilk
- 3/4 c milk
- 1 c yellow cornmeal
- 1 c flour
- 1/4 c sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 Tblsp butter (or coconut oil), melted
- 1/4 c honey
Instructions
Heat oven to 375 degrees. Beat eggs, whisk in buttermilk and milk. Whisk the cornmeal, flour, sugar, baking pwd, baking soda, and salt together in a large bowl. Make a well, then pour the egg and milk mixture into the well and stir until just combined. Add in the melted butter and honey.
Pour the batter into a prepared baking dish or muffin tin (8x8 or 12 ct). Bake until the top is golden brown and the edges have pulled away from the sides of the pan. 12-20ish minutes, depending on choice of pan.
