Oat and Cornmeal Pancakes / Waffles
Ingredients
- 1 large egg
- 2 2/3 c buttermilk (or sour milk)
- 1 1/3 c flour (gf is fine, and I usually sub in some coconut flour as well)
- 2/3 c rolled oats
- 2/3 c yellow cornmeal
- 1 1/4 tsp baking soda
- 1/4 t salt
- 3 Tbsp sugar
- 1/3 c melted butter or coconut oil
Instructions
In bowl or measuring cup, measure buttermilk and beat in eggs.
Stir together flour, oats, cornmeal, soda, salt, and sugar. Add oat mixture and butter to the buttermilk mixture and stir until batter is evenly moistened. Let sit for a few minutes.
Heat waffle iron or griddle to med-high (375 degrees). Waffles usually need to bake for 7-8 minutes.
