Smoked Meatloaf
Ingredients
- 1.5c Onion, finely diced
- 3T finely minced seeded jalapeño (optional)
- 1T finely minced garlic (about 3 medium cloves)
- 1 tsp chili powder
- 1/2 tsp freshly ground black pepper
- 1/2 tsp ground cumin
- 1/4 tsp chipotle powder
- 1.5lbs ground beef (80/20)
- 1.5lbs ground pork or Italian sausage
- 4 eggs
- 1c bread crumbs
- A sweet & spicy barbecue sauce
Instructions
- Sautee the onion. When the onion is translucent, add the jalapeno, garlic. Finally, add the spices and cook for 30 seconds longer.
- Mix with everything else. Mold the meatloaf.
- Preheat the recteq to 325°F.
- Cook to an internal temp of 145°F, then start basting the loaf with barbecue sauce, letting it reach an internal temp of 155°F before removing it. Let rest for 10 minutes before serving.
