Smoked Meatloaf

Ingredients

  • 1.5c Onion, finely diced
  • 3T finely minced seeded jalapeño (optional)
  • 1T finely minced garlic (about 3 medium cloves)
  • 1 tsp chili powder
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp ground cumin
  • 1/4 tsp chipotle powder
  • 1.5lbs ground beef (80/20)
  • 1.5lbs ground pork or Italian sausage
  • 4 eggs
  • 1c bread crumbs
  • A sweet & spicy barbecue sauce

Instructions

  1. Sautee the onion. When the onion is translucent, add the jalapeno, garlic. Finally, add the spices and cook for 30 seconds longer.
  2. Mix with everything else. Mold the meatloaf.
  3. Preheat the recteq to 325°F.
  4. Cook to an internal temp of 145°F, then start basting the loaf with barbecue sauce, letting it reach an internal temp of 155°F before removing it. Let rest for 10 minutes before serving.
