Garden Fresh Tomato Soup
Ingredients
- EVOO
- 1 large onion, diced
- 1/2 tsp black pepper
- 1 tsp salt
- 1/2 tsp thyme and basil
- 32 oz. tomatoes w/ juice (fresh, frozen, or canned)
- 3 Tbsp tomato paste
- 1/4 c. flour
- 3 3/4 c. chicken broth
- 1 tsp sugar
- 1 c heavy cream (or 2/3 c powder milk and 1 c water)
- French bread, garlic, and EVOO for croutons
Instructions
Cook onion in oil till soft; add seasonings. Add tomatoes and paste. Stir and simmer for 10 min. Mix flour with bit of chicken broth and add to tomato mixture. Add remaining broth and simmer for 10 minutes. Add sugar and cream. For thick soup, leave as is. If smooth soup is desired, run through food processor to puree. Serve with croutons.
