Pumpkin Chocolate Chip Muffins
Ingredients
- 1 1/2 cup brown sugar (or half and half with white sugar)
- 1/2 cup coconut oil
- 4 large eggs
- 1 14 oz canned pumpkin
- 1/2 cup milk
- 3 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 Tbsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 1 cup semisweet chocolate chips
- cinnamon sugar
Instructions
Gather all ingredients. Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners. Whisk sugar and oil together in a medium bowl. Add eggs. Stir in pumpkin and water until well blended. Mix flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt together in a separate bowl. Add pumpkin mixture into flour mixture and stir just to combine, being careful not to overmix. Gently stir in chocolate chips. Sprinkle tops with cinnamon sugar if desired. Fill muffin cups 2/3 full with batter. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Enjoy!
