Tuscan Kale Soup

Ingredients

  • 1 tsp olive oil
  • 2 med onions, chopped
  • 8-12 oz sausage, finely chopped and browned
  • 3 cloves garlic, minced
  • 1-2 lg. sweet potato, peeled and chopped
  • 1 bay leaf
  • 6 c. chicken stock
  • 1 or 2 16oz cans kidney or cannellini beans, rinsed and drained
  • 4 c fresh kale, chopped
  • 1 tsp dried basil
  • 1/4 tsp salt
  • freshly ground pepper

Instructions

Heat oil in a large pot over med. heat. Add onions, and saute till soft. Add sausage and garlic and continue cooking 1-2 minutes. Add potato, bay leaf, and stock. Cook 8 min, or till potato is soft. Add beans, kale, basil, salt, and pepper and simmer 5 min or till thoroughly heated.
