Tuscan Kale Soup

- 1 tsp olive oil
- 2 med onions, chopped
- 8-12 oz sausage, finely chopped and browned
- 3 cloves garlic, minced
- 1-2 lg. sweet potato, peeled and chopped
- 1 bay leaf
- 6 c. chicken stock
- 1 or 2 16oz cans kidney or cannellini beans, rinsed and drained
- 4 c fresh kale, chopped
- 1 tsp dried basil
- 1/4 tsp salt
- freshly ground pepper
Instructions
Heat oil in a large pot over med. heat. Add onions, and saute till soft. Add sausage and garlic and continue cooking 1-2 minutes. Add potato, bay leaf, and stock. Cook 8 min, or till potato is soft. Add beans, kale, basil, salt, and pepper and simmer 5 min or till thoroughly heated.
